TENDER RAW JAACKFRUIT SAMBAR


Jack fruit is the seasonal specialty summer  and the best part is,it is edible in all its stages. Tender raw ones goes for sabzi,curry etc,matured raw ones for chips and then comes the ripe fruit. Even the seeds of the fruit are not thrown off TEY too can be used in many delicacies. I have posted lot of dishes prepared with raw and ripened jackfruitin my blog.
Now being festive time I have prepared our own traditiona;l sambar from raw tender jackfruit sambar

INGREDIENTS
Half jackfruit Medium sized tender raw
1 cup Tuvar dal
Tamarind lemon - sized
Jaggery Lemon - sized
1/4 tsp Turmeric Haldi /
 Salt       - to taste
INGREDIENTS FOR SAMBAR MASALA
       ½  cup coconut Grated
2 tbspsCoriander Seeds Dhania
 8 Chillies Red
¼ tspFenugreek seeds
 1 tbsp Bengal gram dal
Curry Leaves - few

INGREDIENTS FOR SEASONING
       1 tbsp Coconut Oil
      1 tsp Mustard seeds
      ½ tsp fenugreek seeds
      2 nos red chillies
       Few Curry leaves




METHOD

 When we cut Jack fruit , a thick "milk" oozes from it. This is sticky in nature so ,before cutting rub generous amount of coconut oil to your hand and grease the cutting knife too.
Cut the raw jack fruit into half and later into medium size long pieces.Remove outer     thorny green skin and the center          stalk part.
 Cut raw jack fruit into bite size pieces and put them into water or,else the colourwill                change.
Add turmeric powder  and cook jack fruit pieces in cooker for 1-2 whistles.
 Meanwhile Pressure cook tuvar dal adding turmeric powder.
Heat a pan adding a tsp of oil and add coriander seeds, fenugreek seeds, Bengal gram      dal and red chillies. Fry till     golden brown and add grated coconut fry till coconut turns  into light golden brown colour
In a mixer,grind add the fried ingredients and grind to a fine paste..
Transfer cooked jack fruit pieces into a vessel. Add salt,tamarind and jaggery and                     boil for 3-4 mins.
Now add ground masala to the jackfruit. Mix well. Add some more water. Keep it on               medium flame and bring to boil.
 Check for salt and remove from flame,
Heat a spoon of coconut oil add mustard seeds once they splutter add methi seeds, red chillies and  curry leaves .Pour it over sambar..
You can also serve this sambar  without seasonings only by adding coconut oil finally.
