Aval Laddu is a simple all loving recipe. Made either using white or red aval; I've made this with red aval since it is a healthier one. Enjoy your evening with Aval laddu.


Aval / poha/ beaten rice                                - 2 cups (White/red. I used red aval .)
Peanut                                                           -1/2 cup
Jaggery                                                         -1 cup and 2 tbsps
Chopped cashews                                        - for garnishing (fried in ghee )
Cardamom powder                                       - 1to 2 tsps
Water                                                            -¾ cup


Dry roast the aval till it becomes crisp and blend it in ablender to a fine powder .
Dry roast the peanuts ,and remove the skin and blend it with the powdered aval with cardamom .
Heat jaggery when it melts filter it .again boil it till it reaches one string consistency .
Put off the flame and add the ground aval mixture to the jaggery syrup .
Initially this mixture looks like watery consistency , but aval/poha absorbs moisture and become thick dough form within 20 minutes .
Preapare laddus  at this point of time .we’ll get perfect shaped laddus without any cracks .
Garnish it with fried cashews and laddoos are ready!
