ACHARI BUTTERMILK

Buttermilk is an integral part of our family especially in summer  and our meal is not complete without buttermilk which is usually taken towards the end of a meal as it has the ability to enhance digestion. I grew up drinking buttermilk, lassi and it still is a routine affair in our home. During this summer season, I usually welcome my friends and relations with this spicy  buttermilk or sweet lassi.This is a traditional thirst quencher with high therapeutic and nutritional properties like cooling, rejuvenating appetising etc. This is easy to digest unlike any other dairy products.The best way to prepare buttermilk is to use homemade fresh curds with water.
Usually buttermilk is blended with green chillies, curry leaves or coriander leaves and salt.But this achari buttermilk is the most favourite flavour of my hubby.I usually try with different flavours with butter milk. This is the one for who loves the spiciness of pickle.
Don’t go for any aerated drinks, instead try this homemade and healthy thirst quencher for this summer.
INGREDIENTS
Fresh chilled thick homemade curds                      - 1 cup
Water                                                                                    - 2 cups
Gravy of any of the pickle                                            - ¼ tsp
Salt                                                                                          - to taste
FOR SEASONING
Mustard seeds                                                                  - ¼ tsp
Red chilli                                                   
                         - 1 no
Curry leaves                                                                       - few
Oil                                                                                           - 1/2 tsp
Asafoetida powder                                                          - a pinch


METHOD
Blend curd, salt, pickle gravy and water in a blender.
Heat oil in a pan add mustard seeds, when it splutters, add red chilli, curry leaves and asafoetida powder and add it to the blended buttermilk.
Spicy achari buttermilk is ready to drink.
Serve this with your breakfast or lunch.
NOTES
Be careful while adding salt because pickle contains salt, adjust it accordingly.
use any variety of pickle as per your choice.
