EGGLESS MUSKMELON CAKE

My blogging life has stepped into its second year with about 25000 page views, a couple of followers and many and many people being helped with their cooking doubts! Thanks for all your support and keep supporting me. Now as a part of celebration, you have the recipe of a superb exciting eggless muskmelon cake!
Musk melons are a powerhouse of health; they are loaded with so many nutrients the superhero of fruits. They are abundantly available in the summers and have a r high percentage of water content in them making them cooling and hydrating. So as the summer approaches, know why you should eat more muskmelons. They not only have a delicious aroma but they also taste amazing. Their seeds contain many health benefits as well.
This summer replace the extra mango with a muskmelon. Muskmelon controls blood pressure, strengthens eyes, helps in weight loss, helps to control diabetes,treats ulcers, prevents kidney stones,helps in quitting smoking etc. This has lots and lots of benefits.




INGREDIENTS
Maida                   - 1 ½ cups
Baking powder-   - 2 tsps
Granulated sugar            -1/2 cup (100 gms)   
Butter                   -1/2 cup (100 gms)
Curd               - 75 gms
Muskmelon puree                       - 1 ¼ cups

INGREDIENTS FOR DECORATION
White chocolate               - 100 gms
Dark chocolate                 - 100 gms
Mango chocolate             - 100 gms
Few drops of pineapple essence(oil base)
Sugar sprinkles     


 



METHOD
·         Preheat oven to 180 degree C
·         Sieve the flour and baking powder together and set aside.
·         Grease and dust with maida a bunt cake mould.
·         Cream the sugar and butter until creamy.
·         Add curd and beat them.
·         Add the dry ingredients in two parts to the butter mixture, alternating twice with the melon purée mix it well.. (mix the batter on medium-high for about 2 to 3 minutes)
·         Pour the batter into a greased and floured cake pan. Bake for 4o to 45 minutes, or till the cake is done.( to check the doneness of the cake insert a tooth pick in the middle of the cake it should come out clean.)
·         Cool the cake in its pan for 10 min., then turn it out onto a rack.
·         In a double boiler or microwave .melt the white chocolate, mango chocolate and the dark chocolate separately
·         Add 2 drops of pineapple essence and mix it.
        Pour the melted chocolate over the warm cake. 
       Eggless Musk Melon Cake is ready to serve.
