American chop suey is kids favourite dish and it is a Indian Chinese adaptation of crispy noodles and served with sweet and sour saucy fried vegetables.In America this chopusey is prepared with beef as a non vegetarian dish. I have prepared in vegetarian version adding vegetables.
Now a days all kids want noodles only, so I have prepared this recipe as a healthier version with Wheat Vermicelli noodles.


 Onions                                               - 2 nos (cut into strips)
 Carrot                                                 - 1 no (cut into strips)
French beans                                     - 8 nos (cut into 1inch  pieces)
Cabbage,                                             - 1 cup (cut into strips)
Green, yellow red  bell peppers        - 2 cups altogether (cut into strips)
Fresh green peas                               - ½ cup
Garlic                                                  - 8 cloves
Light soya sauce                             - 1 tsp
Chilli sauce                                        - 1 ½ tsps
Vinegar                                               - 1 tbsp
Tomato chilli  sauce                       - 2 tbsps
Sugar                                                   - 1 tsp
Cornflour                                            - 2 tbsps(mix in 1 cup water)
Salt                                                          - to taste
Black pepper powder                    - 1 ½ tsps
Cooking oil                                       -  for deep frying
Vermicelli Noodles                       - 3 cups

Boil the water in a large pan adding a tsp of oil and a pinch of salt, add the vermicelli noodles, and cook it just for three minutes, otherwise it will turn soggy.Drain the noodles  and dry it on a kitchen towel and keep aside.Boil enough water with 1/2 tsp salt. Add cabbage, green peas and beans to the boiling water and cook for 2-3 minutes. Remove from heat, strain and pour cold water over the vegetables and strain again. Keep aside.Heat oil in a pan, add the onions and saute on high for 2 mts.Add green, red and yellow bell peppers and saute for 5 mts. Add parboiled vegetables and saute for another 3 minutes.Add soya sauce, vinegar, chilli sauce, tomato sauce, black pepper, sugar and salt and mix well. Mix the corn flour to the two cups of water and bring to a boil.
 Reduce flame and cook for 3-4 minutes and go on stirring continuously till it thickens slightly and coats the vegetables. Remove from heat and keep aside.
Heat oil in deep frying pan.Reduce flame to medium and fry the noodles in batches and cook till it turns golden brown. Remove from flame and drain it in colander.To serve, place the fried noodles on a plate. Ladle the vegetables over the  fried noodles.Yummy, delicious healthy Vermicelli  American Vegetable chopsuey is ready to serve.Serve warm.
You can also bake the vermicelli noodles till crisp
Diagonally cut baby corn can also can be added.

Adding vegetables is purely up to your choice.
