Another
dish from watermelon rind, but this is a sweet dessert. The other one I
posted the dish with watermelon rind is the spicy pickle.This time I tried
halwa out of it. I jumped out of joy cause, it turned out very nicely. I did’nt add any artificial colour to this
halwa. I could not wait to share this recipe with you all. A hot halwa for you.
INGREDIENTS
Grated Watermelon rind - 1 cup
Watermelon juice - ½ cup
Sugar -
½ to ¾ cup
Ghee -
2 to 3 tbsps
Cardamom powder - a generous pinch
FOR GARNISHING
Cashews -
12nos
Raisins - 5 nos
METHOD
Remove the red flesh from the watermelon,
peel off the green skin from the rind and grate the white rind and keep aside.
Extract half cup juice from red flesh and keep aside.
Fry the cashews and raisins in a tablespoon
of ghee and keep aside.
Squeeze the liquid from the grated rind and blend the squeezed rind in a mixie.
Heat a pan add 1 tsp of ghee and add the
blended rind and cook for 5 to 10 minutes in a medium flame.
Add the watermelon juice add a tbsp of ghee
to it and cook till the rind becomes tender.
Add
half cup of sugar and cook till the
mixture becomes glossy.
Add a generous pinch of cardamom powder and
remove from flame immediately and transfer it to the serving bowl and garnish
it with fried cashews and raisins.
Yummilicious watermelon Rind Halwa is ready
to serve.
