Varagu kara adai is the healthy , tasty
and spicy one. Almost all dals are added in this adai. The batter for Adai is ground thicker and
coarser than the regular dosa batter and it does not require any fermentation. This version I have made is, instead of adding ponni rice I
added varagu / kodo millet rice and brown rice. Adai is usually spicy, if it is taken with
chakkavaratti, it tastes heavenly. The spiciness of adai and the sweetness of
chakkavaratti enhance your taste buds.Chakkavaratti is home made.
INGREDIENTS
Varagu rice / Kodo millet rice - ½ cup
Brown rice - ½ cup
Green gram dhal - ½ cup
Tuvar dal - ½ cup
Masoor dal -
½ cup
Bengal gram dal -
½ cup
Dehusked black gram -
½ cup
Grated fresh coconut -
½ cup
Red chillies -
12 nos
Methi seeds - 1/2 tsp
Asafoetida - ¼ tsp
Curry leaves -
½ cup
Coriander leaves -
½ cup
Pepper corns -
12 corns
Cumin seeds -
¼ tsp
Salt - to taste
Gingelly oil -
for making adais
METHOD
Soak rice and dals together for two hours.
Grind everything
together with salt, and asafoetida till rawa consistency.
Heat dosa tawa and spread a ladle full of batter on the
tawa.
Drizzle a tsp of oil in and around the adai and fry till
crisp on both sides.
Spicy Varagu Multi Dal Kara Adai is ready to serve.
Serve hot with Chakka varatti.(jackfruit jam)
