EGGLESS PAALADA PAAL KESARI CAKE

                                          
  Paalada pradhaman is a sweet dish made of flakes of cooked rice, milk, and sugar. A Sadhya, “big feast” in Malayalam is not completed without this dessert. Instant Palada pradhaman mix is available with which I thought of making PALADA PAL KESARI. Since it's Xmas, a kesari wouldn't do the job right? Why not a cake! Yea, it's Palada pal kesari calendar this Xmas! You guys gotta try this out in your ovens and enjoy this awesome fusion cake! And yeah, forgot to tell you something, I bagged first prize for a cake baking competition conducted by caico! Hope you guys enjoy this too.


INGREDIENTS:         

Butter                                                     - 1/2 cup
Paalada kesari                                      - 3/4 cup
Caster Sugar                                           -1  cup
Curd                                                          -3/4 cup
Cardamom Powder                             -3/4 tsp
All Purpose Flour/ Maida                -2 cups
Corn Flour                                              -1/4 cup
Baking Powder                                     -1 tsp
Salt                                                             -1/4 tsp
Milk                                                             -1 cup

      INGREDIENTS FOR PAALADA KESARI

INSTANT PAALADA PAAYASAM MIX                - 2 cups
Milk                                                                                  - 4 cups
Ghee                                                                                 - 2 tsps



 



INGREDIENTS FOR THANDAI MASALA

Almonds                                                 - handful
Milk                                                         - 3 tbsps
Melon seeds                                           - 1 tbsp
Green cardamom                                - 3 pods
Pista                                                        - 4 nos
White pepper                                       - 4 nos
Black pepper                                        - 2 nos
Rose petals or rose water              - 6 to 10 petals or 2 tsps of rose water
Fennel seeds                                       - ¼ tsp
Poppy seeds                                        - ¼ tsp
Saffron                                                   -a pinch

METHOD OF MAKING THANDAI MASALA

Soak the melon seeds, and almonds for two hours.
Soak saffron separately in a tsp of milk.
After two hours blend melon seeds ,almonds and other ingredients  together to a paste and keep it aside.



METHOD FOR MAKING PAALADA KESARI

       Boil four cups of milk in a pan and add two cups of instant paalada payasam         mix and cook it on a medium flame adding two tsps of ghee.
       Cook on low flame till  the moisture evaporates,and  until the kesari starts           to leave the sides of the pan
      Remove from fire and allow it to cool.      Paalada paal kesari is ready.


METHOD FOR MAKING PAALADA PAAL KESARI CAKE.

Cream together butter and sugar until fluffy.
Add paalada paal kesari and beat well until creamy.
In a bowl mix together flour, corn flour, baking powder, cardamom powder and salt.
Add curd to the butter mixture and cream together.
Add milk and mix until incorporated.
Add the flour mixture and gently fold in until all the flour is incorporated.
Preheat oven to 180 degree C.
Grease and dust an 8″ round pan. 
Pour the prepared batter into the pan.
Bake in oven for one hour. When a tooth pick comes out clean, remove from oven and allow it to cool for 10 minutes.
Flip the cake on to a wire rack and allow it to cool completely.
Slice it up and enjoy!! 






                                                                                                                          
FOR THANDAI FRESH CREAM FROSTING:
                                   
Whipping cream                -1cup
Icing sugar                          -4 cups
Thandai masala                              - 4 tbsps


Method

Beat the cream with paddle attachment of mixer, keeping the mixer on low speed.
  Turn up speed to medium add thandai masala and beat well until desired spreadable consistency is reached.
Spread evenly on the cake and decorate the cake as you wish.

ABOUT  THANDAI MASALA

Thandai, or sardai, is a cold drink prepared with a mixture of almonds, fennel seeds, (watermelon kernel), rose petals, pepper, cardamom, saffron, milk and sugar. This drink,common in Khyber Pakhtunkhwa, Pakistan - mostly in Peshawar, Swat, Charsadda, Banaras / Varanasi, Uttar Pradesh. It is thought to be an energy drink. It is native to India Virar and is often associated with the Maha Shivaratri and Holi festival. The consumer of this Thandai is mostly from Rajasthan and Northern India.
