We make variety pickles with raw mangoes like mango thokku , avaakkai, cut
mango etc.But all these need lengthy process to prepare it.
Here is an instant
raw green mango pickle / manga curry that requires no marination. We can have it
immediately as soon as we prepare it. Unlike marinated pickles this pickle don’t
have long shelf life so we need to refrigerate this pickle and use within two
three days.This is a kerala style instant mango pickle and super easy to prepare it.The amazing flavour of raw mango gives a heavenly taste.
INGREDIENTS
Raw green mango - 2 nos no(cubed with skin)
Fenugreek seeds - 1/2 tsp (dry-roasted and powdered)
Asafetida - 3/4tsp
Red chili powder - 2 tsps(adjust the chilli powder as per your preference)
Salt - to taste
gingelly oil - 5 tbsps
SEASONING
Mustard seeds - 1 tsp
Fenugreek seeds -
½ tsp(optional)
METHOD
In a mixing bowl put
cubed mangoes and add red chilli powder, salt, asafetida and fenugreek powder.(do
not mix chilli powder, fenugreek powder salt before pouring the hot oil)
Heat gingelly oil and add mustard seeds,when it splutters,
pour this seasoning over the top of cubed mango mixture and mix well.
Store in a glass container in the refrigerator.
Serve with curd rice .
