MIXED VEGETABLE KARA KUZHAMBU


 Kuzhambu is a staple food in many South Indian homes. There are a number of varieties in Kara kuzhambu,, the preparation varies based on the type of kuzhambu.  Here I have prepared with mixed vegetables.Enjoy this dish with rice, or with any other breakfast items.




INGREDIENTS

Drum stick, brinjal, ladies finger                  - sliced (1/4 kgall together)
Tamarind                                                               - gooseberry sized
Small onions                                                        - 1 cup (finely chopped)
Jiggery                                                                     - 1 tsp
Grated Coconut                                                   -1 ½ cups
Turmeric powder                                               - ½ tsp
Thick Coconut milk                                         - ½ cup
Gingelly oil                                                          - 4 tbsps
Salt                                                                          - to taste        

INGREDIENTS TO MAKE MASALA POWDER

Toor dal / thuvaram paruppu                       -1 tsp
Bengal gram dal/Kadala paruppu                -1 tsp
Urad dal/Ulutham paruppu                           -1 tsp
Coriander seeds/Dhaniya                             -1 tsp
KhusKhus/Kasakasa                                       -1 tbsp
Fenugreek seeds                                              -1 tsp
Red Chillies                                                        -6 nos
Asafoedia                                                          -1/2 tsp
Cinnamon stick                                             -one inch








METHOD

Dry roast all the masala ingredients , and grind into fine paste along with the grated coconut
Soak the tamarind in water for 20 minutes and extract the pulp with 4 to 5 cups of water
Heat a fry pan,add the oil ,season with the mustard seeds,small onions and the vegetables and saute it for few mins
Add the tamarind water,ground masala paste and the turmeric powder.
Cook for 20 minutes in a medium flame or till the vegetables  are cooked.
Add the salt ,jaggery and add the coconut milk, mix well and remove from the flame before it starts to boil.
Kara kuzhambu is ready to serve.
Serve hot with steaming rice or with dosas, idlis etc.
