VERMICELLI IDLI

INGREDIENTS

1 cup rawa
1 cup roasted vermicelli
2 cups curd
1 cup water
Salt, as required
¼ tsp cooking soda

FOR SEASONING

2 tbsp oil
1 tsp mustard seeds
½ tsp black gram/urad dal
1 tbsp cashew nuts
1 sprig curry leaves
4 green chillies
1 inch piece ginger, finely chopped
1 tbsp grated coconut
1 tbsp coriander leaves, finely chopped



METHOD
Heat oil in a pan add mustard seeds
When it crackles, add black gram, cashew nuts, chopped green chillies, ginger pieces and saute
Add rawa and fry till it gets roasted
Add roasted vermicelli and allow to cool
Add curd, water, cooking soda, grated coconut, coriander leaves, salt, curry leaves and mix well
Keep the mixture for 10 minutes
Pour into greased idli moulds and steam for 10 to 12 minutes
Serve hot with coconut chutney, sambhar or with chutney powder
