Andhra paruppu podi/Kandi
podi is a homemade spice mix powder which is flavourful and
protein-packed. Kandi podi is a classic Andhra recipe prepared with roasted
toor dal (arhar dal), chana dal (bengal gram dal),or roastes bengal gram dal, dry red chili-, ground to a fine powder. Andhra meals would be incomplete without this paruppu podi.Paruppu
podi or kandi podi can be stored in refrigerator for 1 or 2 months if stored
properly in an airtight container.Stock this paruppu podi in your
kitchen so that it will be handy when you are not in a mood cook.Paruppu podi is
usually served with hot white rice with a tablespoon of ghee.
Other than serving simply with rice and ghee, you can also make paruppu podi sadam with this spice powder by adding seasonings.This will be a easy lunch box dish .

Tuvar dal - 1 cupRoasted bengal gram dhal/pottukadali - 1 cupSalt -to tasteRedchillies - 12 nosGarlic cloves -5 clovesGhee - 1 tspPepper corns -1 tsp

METHOD ADD AGAIN,REPEAT IT AND STORE
Heat a kadai add the toor dal in ghee and saute
till it starts to change in colour.Fry red chillies in and add gram dal and fry till every thing heats up well.Switch off the flame add garlic cloves,salt and let it cool.Powder it to a nice powder in a mixie and sieve it.Add the coarse powder and powder it again.Once again sieve the powder.Andra paruppu podi is ready to serve with steaming hot rice and melted ghee.
