PLANTAIN STEM KABABS

Plantain stem kabab is a delicious starter,a healthy and tasty snack. We use plantain stems to prepare fry or stew.  For a change I have tried kababs with this. Came out very well. It is rich in fibre,potassium, and also helps to increase the hemoglobin levels. It helps to reduce weight  and controls blood pressure.

INGREDIENTS

 Finely chopped plantain stem                 - 1 cup
 Onion (finely chopped)                            - 2 nos
 Garlic flakes                                                    - 5 nos (optional) Ginger                                                              - ½ inch
 Chilli powder                                                  - ½ tsp
 Garam masala                                               - ½ tsp
 Coriander  powder                                      - 1 tsp
 Turmeric                                                         - a pinch
 Gram flour                                                      - 1 tbsp
 Cornflour                                                        - 1 tsp
 Coriander leaves                                          - a handful
 oil                                                                       - for  shallow frying cutlets
 Salt                                                                     -to taste
 Peanuts                                                           - a handful




METHOD


Dry roast the peanuts on a pan. Allow to cool down. Crush them coarsely.

Heat oil in a pan, add the onions, ginger and garlic. Fry till onions becomes translucent.

Add the chopped plantain stem along with turmeric powder, garam masala powder, coriander powder and chilli powder.


Cover the pan with a lid and cook till plantain stems  becomes soft.

Allow the mixture to cool and give whip or two in a mixie.

Transfer to a mixing bowl and add the besan, cornflour and chopped coriander leaves.


 Mix well and shape into a flattened disc or any other shape as you wish.

 Roll it gently over the crushed peanuts.

Heat a non-stick tawa and drizzle the  oil on it. Place the flattened discs on the tawa and cook on both sides till  golden brown colour.


Plantain stem kababs are ready to serve.

Serve hot with tomato sauce or any other accompaniments.
