To celebrate this occasion, I have posted a special and unique sweet recipe for you all. Aval Potato kesari, prepared with Coconut milk. It is very easy to make , try out this.
Brown rice flakes or white rice flakes - 1 cup
Potatoes - 3 nos(medium sized)
Sugar - 2 cups
Coconut milk - 1 cup
Ghee - ½ cup
Cardamom powder - ¼ tsp
INGREDIENTS FOR GARNISHING
Cashews - 10 nos
Ghee - 2 tbsps
Boil the potatoes peel the skin, mash well and keep aside.
Wash the rice flakes and squeeze the water from it.
In a pan pour one cup of coconut milk and cook the rice flakes till it becomes soft.
Add the mashed potatoes and mix it well.
Add sugar , food colour and half portion of the ghee.
Mix well and cook in a medium flame till it starts to thicken, add the remaining ghee and cook till the kesari gets a glossy/smooth texture.
Add cardamom powder, food coloring and garnish it with fried cashews.
Yummy potatoyee, Potato Aval Coconut milk Kesari is ready to serve.
