VANNI


Vanni is a  authentic and traditional Palakkad Iyer recipe.. A simple and healthy combination of Naadan Veggies like Ash Gourd, Pumpkin, Raw Bananas, and Yam simmered in mildly spiced thin yogurt gravy. vanni is a close cousin of mor kuzambu.












INGREDIENTS

Pumpkin, yeppow pumpkin, yam and raw banana  -2 cups(all together)
Sour curds                                                                       – 2 cups

 Green Chillies                                                                – 3 nos
. Black Pepper Powde                                                  – ½ tsp
 Turmeric Powder                                                        – ¼ tsp
 Curry Leaves                                                               - one sprig
 Coconut Oil                                                                – 2 tsps

 Salt                                                                                -to taste









Method

Wash and chop the vegetables into medium sized cubes.
 Add about ½ cup of water to the veggies and pressure cook them with slit green chillies, turmeric powder and pepper powder.
Add required  salt to the cooked vegetables  and allow to boil for about 3 to 4 minutes.
beat  the curds well, lower the flame and add the curds to the vegetables.
Simmer till the curry froths up. (The curry should not boil after adding the curds.)
remove from  flame.
Add coconut oil and add a few curry leaves.
Transfer it to a serving bowl.
Serve hot with steam hot rice or  kanji
