Coriander Khaman Dhokla





Khaman dhokla, a famous snack sold in every street of gujarat, it is no longer restricted to that region -- it is readily available in every part of the country. 

Ingredients:

  • Besan Flour      : 1 cup
  • Sugar                 : 1&1/2 tbsp
  • Citric acid         :  1/2  tsp
  • Rava                  : 1&1/2 tbsp
  • Eno fruit salt    : 1&1/2 tsp
  • Salt                    : to taste
  • Oil                     : 2 tbsp
  • Turmeric Powder : ½ tsp
GRIND TOGETHER :
  • Coriander         : small bunch
  • Green chillies   : 6  No
  • Small Onion      : 7 No
  • Garlic                 : 7 No’s (optional)
  • Ginger               : 1 inch piece
  • Water               :  ¼ cup

The above ground paste should be of one cup quantity .

FOR GARNISHING :
  • Freshly grated  coconut :1/4 cup
  • Coriander leaves :for garnishing    

 For Seasoning:
  • Mustard  seeds   : 1 tsp
  • Hing                       : 1/4tsp
  • Oil for seasoning : 2 tbsp

Method:

  1. Pre-heat the steamer.
  2. Mix Besan , Rava , salt ,turmeric powder ,sugar ,citric acid  and mix well .
  3. Add ground coriander paste ,oil and eno fruit salt .
  4. Steam this for 25min.
  5. When a little cool, cut into squares and keep in a serving bowl/plate. 
  6. Heat remaining oil in a small pan. Add mustard seeds. When the seeds begin to crackle, remove and pour over the dhoklas.
  7. Serve, garnished with chopped coriander leaves and scraped coconut.
