NEY PAYASAM

The navarathry season has come. Now onwards you'll be having a series of some special naivedyams for navrathry. First on the list is the all loved ney payasam.

INGREDIENTS

Good quality raw rice                                     - 1 cup
Jaggery                                                           -  1 cup
Good quality ghee                                         - ¾ cup
Cardamom powder ( elaichi )                        -powdered from  six cardamoms
Cashews or coconut bits                                -2 to 3 tbsps



METHOD

Clean  and wash the rice well , add five cups of water and pressure cook .
Keep jaggery in a frying pan , ( thick bottomed wide mouthed vessel ) add one cuo water and boil .
When it melts strain through a strainer to remove the dirt or mud .
Replace and boil again. When its become  slightly thick add the cooked rice and srir continuously till it becomes thick .
Towards the end start adding ghee now and then stirring continuously .
When ghee starts leaving the sides of the pan ,add powdered elaichi and stir well .
Finally add fried cashew or coconut bits fried in ghee .

Transfer to a serving bowl .
