Potato bonda is a deep fried savory made with spicy potato mix. It
is a classic tea time snack. Generally, chopped onions were fried and the boiled
potatoes were added in the fried onions, but I have made a small variation by grinding the fried onions .In Mumbai this is a popular
street food called Batata Vada.
INGREDIENTS:
- Medium sized potatoes boiled and peeled - 3 nos
- oil - 1 tbsp
- mustard seeds - 1 tsp
- turmeric powder - 1/2 tsp
- onions chopped - 4 nos
- green chillies - 5 nos
- garlic - 5 cloves
- ginger - 1 tbsp (chopped)
- coriander leaves - 2 tbsps
- lime juice - 1 tbsp
- salt - to taste

FOR BATTER:
- Gram flour - 1 cup
- Rice flour - 1/2 cup
- asafoetida - 2 pinches
- salt - to taste
- chilli powder - 2 tsps
- water - enough to mix the batter
- oil - for deep frying
METHOD FOR MAKING BATTER:
1. In a bowl mix besan, rice flour, salt, asafetida, chilli powder.
Add water to make a thick and smooth batter. Set aside.
METHOD FOR MAKING FILLING:
1 Heat oil in a frying pan on medium heat .
2 Add chopped onions, garlic, ginger and green chillies
3 Fry it for two to three minutes adding salt
4 Allow it to cool and just whip it in a mixer.(don’t grind it to a smooth paste)
5 Keep it aside.
6 Again heat oil in a pan and add mustard seeds, when it splutters add the whipped onion mixture and fry for sometime and add potatoes, turmeric and salt.
7 Stir fry for about 3 minutes over medium heat. Add chopped coriander leaves and mix it well and remove from heat and add the lime juice
8 Let the potato mix cool off, and make them into lemon sized ball.
9 Heat oil in a frying pan on medium high heat.
10 Dip the potato balls into the batter one at a time, making sure the potato balls are completely covered with batter. Then, slowly drop them into the frying pan.
11 Turn them occasionally. Fry the bondas until all sides are golden-brown.
12 serve hot with chutney.
