Barnyard Millet/ kuthuraivali, has amazing
health benefits. Nowadays, people have started replacing white rice with these
millets. They help us to retain good physical fitness, reduce diabetes, an
excellent anti oxidant, have lot of iron, hence prevent anaemia, rich in
dietary fibre and prevent constipation.
In the sugarcane series we have another recipe
with millet, kuthiravali / barnyard millet sugarcane neyyappam.
These appams are so soft, porous, tasty and
spongy. Let's see the recipe.
INGREDIENTS
Kuthuraivali rice / barnyard millet – 1 Cup
Sugarcane juice – 1
Cup
Aval
rice flakes (thin) – 3/4 cup
Fresh
grated coconut – 1 cup
Jaggery
( powdered) - ¼ cup
Cardamom powder – 1 tsp
Dry ginger powder/ chukka podi – ½ tsp
Salt – a
pinch
Ghee or oil -
for frying appam
METHOD
Wash the rice and soak it for two hours.
Soak the aval/ rice flakes in ½ a cup of
sugarcane juice.
Grind the rice and aval to a fine paste with
remaining cane juice and add grated fresh coconut,and jiggery.(no need to add
water while grinding)
Ferment the batter for 5 hours and add cardamom
powder.
Heat appam pan add oil or ghee to it and
heat it.
Pour the batter in each moulds and fry it in a
medium flame.
Fry on both sides till golden colour.
Kuthiraivali / barnyard sugarcane neyappam is
ready to serve.
