Alphonso mango is a seasonal fruit, considered
to be among the most superior varieties of the fruit in terms of sweetness, richness and
flavour.. we can prepare Mango sorbet, ice cream, lassi, soufflé, mousse , milk shake etc. using Alphonso
mangoes.. I
have prepared spicy, tangy and sweety alphonso mango dosas from this seasonal beauty. This is very healthy too, because I have used varagu rice / kodo millet, thinai / fox tail
millet, hand pound rice.This unique alphonsa mango dosa is for all dosa lovers.
INGREDIENTS
Raw rice - ½
cup
Varagu rice / kodo millet -
½ cup
Thinai / fox tail millet -
¼ cup
Hand pound rice -
½ cup
Methi seeds -
1 tsp
Red chillies -6
nos
Cumin seeds powder -
½ tsp
Alphonso mango puree - from 2 mangoes
Gingelly oil - for frying dosas
METHOD
Wash Soak everything together with red chillies for three
hours.
Grind to a smooth paste, adding mango puree.
Heat a dosa tawa, pour the batter in the centre of the
tawa and spread it to round shape and drizzle a tsp of gingelly oil around the
edges of the dosa and cook for two minutes and turn it to the other side and
fry.
Tangy, spicy, and sweety Alphonso mango dosa is ready to serve.
Serve hot with any accompaniments of your choice.
