People always overdo the mangoes and bananas when it comes to cheesecakes and it is after all the season for mangoes . But for a change I decided to prepare the almost forgotten fruit in the form of a no-bake cheesecake; a decision that may be crazy but good indeed. Preparing with homemade cream cheese is a super-duper hit and they turned out fantabulously well.
INGREDIENTS FOR
CRUST
Peanuts - ½ cup
Grated coconut - 1/3 cup
Coconut milk powder / milk powder - 2 tbsps
Raisins - 1/3 cup
Water - 1 to 2 tsps
Grated coconut - 1/3 cup
Coconut milk powder / milk powder - 2 tbsps
Raisins - 1/3 cup
Water - 1 to 2 tsps
METHOD TO PREPARE CRUST
Grind the peanuts down to flour in a food processor or in a blender.
Add the raisins, coconut, and coconut milk powder / milk powder.Grind until the raisins are broken down.
Add the water and pulse again.( the mixture needs to hold together when pressed in your hand.) Press into a 6″ spring form pan.
Using the backside of the spoon, press the mixture tightly so that it remains flat.
Keep in refregirator to chill
INGREDIENTS FOR THE CHEESE CAKE FILLING
Cream cheese - 250 gms
Whipping cream - 150 ml ( whip it to soft peaks )
Jack fruit pulp - 1 cup (pureed out of 20 jack fruit bulbs)
Sugar - 2 tbsps
Whipping cream - 150 ml ( whip it to soft peaks )
Jack fruit pulp - 1 cup (pureed out of 20 jack fruit bulbs)
Sugar - 2 tbsps

FOR GARNISHING
Jack fruit pieces - few dipped in melted
chocolate.
METHOD TO PREPARE FILLING
In a separate bowl, using an electric
beater beat the cream cheese until soft.
Add the sugar and beat further.Add the jackfruit pulp into this mixture and continue to beat.
Add the whipped cream into the cheese cream and fold it gently .Finally, fold in the whipped cream into the cream cheese mixture and mix well.
Take the spring form pan out from the refrigerator and pour the jackfruit cream filling into the pan.
Refrigerate overnight or until set.
Yummy Eggless no bake eggless jack fruit cheese cake is ready to serve.
Garnish with diced and chocolate dipped jackfruit pieces on top.
VARIATIONS
You can use almonds or cashews instead of peanuts
