Getting
bored of eating the usual paneer bhurji, then try out this unique bhurji with
jack fruit seeds and raw mangoes.

INGREDIENTS
Raw
mango finely grated - 1 cup
Jack fruit
seeds - 2cups
Finely
chopped onions -1 cup

garlic -
4 nos

spring onions - 3 tbsps

chopped ginger - 1 inch piece
Red chilli
powder - 1 tsp
Turmeric
powder - ½ tsp
Channa
masala powder - 1
tsp
Salt -
to taste

Oil -
2 tbsps
Fennel
seeds - 1 tsp
Curry leaves - 1 sprig
FOR GARNISHING
Spring
onions -
1 tbsp
METHOD
Steam cook the jackfruit seed for one whistle
in the presuure cooker.
Grate finely
the mangos and squeeze the liquid from the grated mangoes and keep aside.
Blend coarsely
the boiled jackfruit seeds and keep aside.
Heat oil
in a pan and add fennel seeds, when it splutters add curry leaves and broken red chillies.
Add chopped
onions, spring onions, garlic and ginger and sauté till onions becomes
translucent.
Add grated
and squeezed mangoes and cook till the moisture is absorbed from the mangoes.
Add coarsely
blended jackfruit seeds , required salt, red chilli powder, channa masala
powder and mix till everything incorporates well and all the moisture is
absorbed and remove from flame.
Garnish
it with spring onions.
Mango jackfruit
seed bhurji is ready to serve.
Serve hot.
