RICH ROYAL ORGANIC COCONUT SUGAR SHAHI THUKRA

The speciality of this dish is that I prepared this dish to review a fantastic product the Go India Organic coconut sugar. The plattershare in association with go india organic is conduction a review survey under the name “plattershare belly nirvana”. Well, the name surprised me a lot! In this program, they’ll send a specific product to some of the shortlisted members of plattershare and what they wanted me is to prepare a dish from the product, a dish which brings in the satisfaction and peace to the belly. And hence this name! so for review, I’ve prepared a superb yummy and satisfying healthy dessert! The shahi tukra.
Shahi tukra recipe - a rich, royal Mughali dessert of organic coconut sugar syrup coated bread topped and soaked with fragrant creamy sweet thickened milk or rabri and garnished with dry fruits.usually we prepare the dish with white sugar, but instead I’ve used the Go India Organic coconut sugar, and instead of white bread, I used brown bread, which is healthier and doesn’t create much problems! And most important thing is, this is a dish which the diabetic people can also have since there’s no use of white sugar. Probably now you got how healthy this really is!


  INGREDIENTS 

  FOR RABRI

Milk                                                 -1 litre full fat milk
Organic coconut sugar          - 3 tbsps
Cardamom powder                 - 1/4 tsp

FOR SUGAR SYRUP

Organic coconut sugar           - ½ cup
water                                              - ¼ cup

FOR  FRYING BREAD:
Brown bread                             - 6 slices
 Ghee                                             - 3 to 4 tbsps

FOR GARNISH

Fried almonds                                   - 1o nos
Fried cashews                                    - 10 nos

METHOD

PREPARING THE RABRI OR CREAMY THICKENED MILK

In a broad thick bottomed pan boil milk, simmer the milk for some more minutes.
Add ¼ tsp cardamom powder.
Remove the clotted cream which forms on top of the milk and add it back to the milk. also keep on scraping the dried milk from the sides and add them back to the milk.
Stir and scrape often so that the milk does not get browned or burnt from the bottom as well as the sides.
keep on simmering, stirring, removing the clotted cream and scraping.
when the milk has reduced and become thickened.
Add organic coconut sugar and stir well so that the sugar dissolves.
It will take about 1 hour for the milk to thicken on a low flame.






FRYING THE BREAD SLICES

Cut the breads using doughnut cutters.( If you don’t have doughnut cutter cut them into squares, rectangles or triangles. Don’t forget to remove the crusts of the bread)
Heat 1 tbsp of ghee in a pan.
Place the bread slices and on a low to medium heat toast them.
when one side is browned, flip and toast the other side till it gets  even golden color.
keep the bread slices on paper towels.

PREPARING SUGAR SYRUP

Mix ½ cup of organic coconut sugar with ¼ cup water in a pan.
keep the coconut sugar solution on a low heat.
Allow it to boil.
Cook till you get a one thread consistency in the sugar syrup.
Remove from flame and add cardamom powder.
If in case the syrup cools and crystallizes before you soak the bread in it, then just add about 1 to one and half tbsp water and reheat the syrup.





ASSEMBLING THE SHAHI TUKRA

Dip the bread slices in the coconut sugar syrup., coat the bread slices evenly with the sugar syrup.
Arrange the organic coconut sugar syrup soaked bread slices neatly in a serving tray or plate.
pour the rabri on the organic coconut sugar syrup coated bread slices.
Garnish with fried almonds and fried cashews.
Serve the Rich Royal Healthy Organic Coconut Sugar Shahi Tukra.


Review of the Goindiaorganic Coconut sugar

First of all, the product is easier to handle than white sugar. It has a sandy texture and consumes lesser cooking time than white sugar. And it has attracted me with caramelic taste and aroma. Its taste is mildly similar to that of jaggery and an it has enticed my taste buds with its caramelic flavor. I've used this for making the sugar syrup and rabadi! And I feel that it tasted superb than the shahi thukra from white sugar. It taste heavenly and everyone in my family loved it!!
And yeah this is a superb product and I would suggest that you shift from white sugar to this since it is more healthier and contains no chemicals than white sugar. you can also use this in your daily drinks like tea, coffee etc. Try using this people!
