Kaniyappam is small fried pancake usually given to kids who
visit neighbor’s house asking for kaineetam. Taste
wise kaniyappam is a similar to neyyappam and athirasam. I made it twice, and got very tasty kaniyappam ,
INGREDIENTS
Freshly ground rice flour
-
3 cups
Jaggery - 1 ½ cup
Sugarcane juice - ½ cup
chopped coconut fried in ghee / grated coconut – 2 tbsps
chopped coconut fried in ghee / grated coconut – 2 tbsps
Sesame seeds – 1 tsp
cardamom powder - ½ tsp
oil - for frying
cardamom powder - ½ tsp
oil - for frying
Water - ¾ cup to 1 cup
Ghee - 1 tbsp
METHOD
Melt jaggery in ½
cup cane juice and strain for impurities
Fry coconut pieces in ghee until it becomes golden brown and keep aside.
In a bowl add
rice flour,strained jaggery water and
sesame seeds, ghee fried coconut along
with that ghee and rest of water to form smooth batter without any lumps and set aside for 1 hour.
After an hour
heat oil in a thick bottom pan and add 1/4cup batter it will spread.
Once the side
turns to crisp flip on to other side and cooks the other side too.
Remove from oil and keep it in colander to
remove the excess oil.
Prepare kaniyappam
with remaining batter.
Enjoy this vishu
with this traditional Kaniyappam.
