Chinese potatoes / koorka , With its natural aroma, cant explain in words…….. this tastes heavenly. Usually in Kerala only Mezhukupuratty is made with this. Mezhukupuraty means Chinese potatoes boiled and fried in coconut
oil and its a best accompaniment for lunch with sambar, mor curry etc….. .
Chinese potatoes/koorka
are a seasonal one and I pretty much use them in some way, shape, or form . I have
posted some recipes with this chinese potatoes/koorka in my blog.
Here today I have prepared a sweet dessert
with this Chinese potato/koorka. I have caramalised the sugar and added the
boiled Chinese potato/koorka along with nuts.
Prepare this caramelised sweet for this Holy and Make this holy a caramel colour and a special one.
Here goes the recipe. Do try it and put in
your feed back.
INGREDIENTS
Chinese
potatoes/koorkai -
200 grams
Brown sugar (light or dark) - 1 ½
cup
Water -
½ cup
Butter -
50 grams
Chopped
cashews andalmonds -
50 grams
Salt -
a pinch
METHOD
Fry
the almonds and cashews till its half done and keep aside.
Wash
and Peel the Chinese potatoes/koorkai
and pressure cook for 4 whistles or until tender.
In
a pan, combine brown sugar, butter and melt till bubbly and add salt and water
and stir till it becomes smooth.
Simmer the flame for 5 minutes.
Add
the cooked Chinese potatoes/koorkai and half of the almonds and cashews to the
caramalised brown sugar and mix well until the Chinese
potatoes are caramelized, about 20 minutes. If syrup is too thin, add a bit
more brown sugar.
Remove from flame and add decorate it with
remaing nuts.
Yummy nutty caramelised chinese potatoes/koorka is ready to serve.
