Small millet/ samai belongs to the famous millet family. small millet can be cooked as much as like rice, they can be steam cooked or pressure cooked. They contains nutrients like Zinc, magnesium, vitamins,potassium,folic acids, iron and calcium.I love cooking with millets I replace rice completely with millets.With this small millet/ samai I have preapared pal payasam.

Samai rice / small millet - 1 cup
Concentrated milk (or) full -2 cups
Sugar - 2 cups
Cardamom powder - ½ tsp
Wash the rice well, add 2 cups of milk and ½ cup of water and pressure cook.
Add the remaining milk , sugar and boil well in a simmer flame for 20 minutes till it becomes thick and becomes light golden colour.
Add powdered cardamom and remove from fire.
Make sure the milk rice mixture should at the bottom or atleast half of the cooker else it will overflow while cooking.
The more time you cook in low flame the payasam gets the flavour of rice and colour.
This payasam tastes delicious with the full flavour of milk and rice. And without any garnish.
