Amaranth leaf
cooked with coconut milk and coconut gravy tastes heavenly. It is a flavour some and
nutritious green. I have posted other recipes with amaranth leaves. Try out this
yummy stew.
INGREDIENTS
Amaranth leaves (chopped) - 2 cups
Turmeric powder - ¼ tsp
Coconut milk -
1 cup
Salt -
to taste
Sugar -
1tsp
INGREDIENTS FOR
WET GRINDING
Freshly grated coconut - 1 cup
Green chillies - 5 to 6 nos
Small onions -
4 nos
Coconut oil -
2 tbsps(for garnishing)
Curry leaves -
few sprigs
METHOD
Wash and cook the amaranth leaves with less ¼
cup of water adding turmeric powder and sugar.
Allow it to cool and grind coarsely the amaranth leaves.(don’t make it to a smooth paste).
Grind the grated coconut, green
chillies.small onions to a smooth paste and keep aside.
Mix the ground coconut paste and coarsely
ground amaranth leaves adding required salt and water till you get the desired
consisitency and cook for 10 minutes in a medium flame.
Finally add the thick coconut extract and mix well and
remove from flame.
Garnish it with raw coconut oil and curry leaves.
Yummy amaranth greens coconut milk stew is ready to
serve.
Serve hot with white rice, dosas, idlis, rotis etc.
VARIATIONS
You can fry onions, slitted green chillies, ginger juliens
slightly before adding the ground pastes.
While grinding the coconut add 2 or 3 garlic cloves,and
add tomato, if you need a tangy taste, or else add a tsp of lime extract
finally .
You can use any other greens for this stew.
