Pineapple pickle is a great accompaniment for rice, rotis etc. This pickle I prepared with fresh pineapples. You can also use tinned Pineapples. Try out this delicious sweety, spicy and tangy pineapple pickle.You will surely love it.
INGREDIENTS
Pineapple - 2 cups(chopped
into small cubes)
Mustard seeds -
1 tsp
Methi seeds - ½ tsp
Chilli powder - 2 tbsps
Asafetida
powder - ¼ tsp
Salt -
to taste
Sugar -
2 tsp
SEASONINGS
Mustard
seeds - 1 tsp
Curry leaves
- 1 sprig
Green chillies - 2 nos(slitted)
Red chilli - 1 no
Gingelly
oil - 4 tbsps
METHOD
Mix the
chopped pineapple pieces, salt and sugar and keep aside for 20 minutes.
Meanwhile
heat a pan dry roast mustard seeds, methi seeds separately and powder it in a
mixie.
In the
same pan heat slightly the required salt and keep aside.
After 20
minutes squeeze the pineapple and strain the liquid and boil it.
Allow it
to cool completely and mix this boiled pineapple extract with the pineapples
and add dry roasted powder, chilli powder and salt, mix well .
Season the
pickle with mustard seeds, curry leaves, red chilli and green chillies.
Sweet and
spicy pineapple pickle is ready .
