ETHAKKA THOLI THORAN / RAW BANANA PEEL STIR FRY

 Try this fry with Raw banana peels / Ethakka tholi thoran.  You wont ever throw away the peels any more if you try this stir fry. This is a typical kerala dish.This peel is rich in fibre and nutritious too.

INGREDIENTS

 Ethakka tholi / raw banana peel (chopped finely)  - 1 cup
 Butter milk                                                                                - 1 table spoon
Turmeric powder                                                                    - 1/4 tsp


 Grated coconut                                                                      - 1/4 cup
 Green chilli                                                                              - 3 nos
Curry leaves                                                                             - few
Crush together grated coconut, green chillies and curry leaves in a mixie.

 FOR SEASONING

 Coconut oil                                                      - 1 tbsp
 Mustard seeds                                                 -1 tsp
 Urad dal                                                             - 1 tsp
Curry leaves                                                       - 1 sprig



METHOD

Wash the chopped ethakka tholi / raw banana peel in water and butter milk.
Pressure cook the chopped ethakka tholi by adding turmeric powder and required salt for 4 whistles.
Heat oil in a pan and splutter mustard seeds, urad dal and fry.
To this add cooked ethakka tholi / raw banana peel and saute for 2 minutes.
 Add crushed coconut mixture and cook on low flame for 3-4 minutes.
Mix well, yummy ethakka thoran is ready.
Serve hot as an accompaniment with steaming rice, moru kootan and pappadam.

VARIATION

You can add red bean / van payaru to this.Cook the red bean  with the banana peel.
Can also add few small onions when you crush the grated coconut.
