Jack Fruit Kofta Methi Coconut Milk Curry is a vegetarian delicacy cooked especially
around the summer season when jackfruit
is available.Again this Jack fruit
recipe is unique one. I experimented to make koftas out of jack fruit and
cooked in coconut milk and kasoori methi.
This tastes heavenly and a great combination with ghee rice, naan, rotis
etc. Give a try before the jack fruit season ends.

INGREDIENTS
Raw Jackfruits, cut into small pieces - 250 gms
Finely chopped onion -
2 nos
Green chilli, chopped - 3 nos
Ginger garlic paste - 1 tsp
Chopped coriander - 1 tbsp
Turmeric powder -
¼ tsp
Coriander powder - ½
tsp
Cumin powder -
½ tsp
Garam masala powder - 1/2 tsp
Gram flour - 2 tbsp
Corn flour - 1 tbsp
Salt -to
taste
Cooking oil - to deep fry
FOR THE GRAVY
Onion -2 medium thinly
sliced
Tomato puree - 2 cups
Ginger garlic paste - 1 and ½ tbsp
Green chillies, chopped - 3 nos
Cumin seed -1/2 tsp
Turmeric powder -½ tsp
Red chilli powder - ½ tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Garam masala powder - ¼ tsp
Cardamom powder - ¼ tsp
Honey - 1 tbsp
Thick coconut milk - 1 cup
Kasoori methi - 1 tbsp
Oil , - 2 tbsp
Ghee -
1 tbsp
(dry roast the kasoori methi and
crush it with the hands and keep aside).
METHOD OF MAKING THE KOFTAS
Boil the jackfruit in a pressure
cooker with a little salt and turmeric powder. until soft. Drain and allow
cooling.
Mash the jackfruits in a mixing bowl,
add chopped onion, green chillies, coriander powder, cumin powder, garam
masala, chopped coriander, salt and mash together to incorporate. Then mix the
gram flour and corn flour and ginger garlic paste to bind.
Shape into small oval or round kofta
balls.
Heat enough oil and deep fry the
koftas until golden brownand keep aside
METHOD OF MAKING
GRAVY
Heat oil in a kadhai, add the, cumin
seeds.
Add sliced onion and fry until
golden.
add ginger garlic paste, fry for 1-2
mins on medium heat. Add turmeric, chilli powder, coriander powder, cumin powder and fry
until the oil starts to separate.
Then add tomato puree, little salt
and ghee , fry until oil separates. Then add ½ a cup of water and allow the
gravy to cook for 5 to 7 minutes.
Add honey, kasoori methi and add the
fried koftas, sprinkle garam masala powder and add the coconut milk and remove from flame.
Jack Fruit Kofta Methi Coconut Milk Curry is ready to serve.
Serve with ghee rice, roti, naan etc.
