Sambar powder is a flavorful South Indian style coarse textured spices powder, prepared by grinding various type of basic Indian spices like coriander seeds, cumin seeds, mustard seeds, black peppercorns, dry red chilies, fenugreek seeds, cinnamon, dry coconut etc. with chana dal.
Coriander Seeds / dhania – 1 cup
Cumin Seeds / jeeragam – ¼ cup
Fenugreek Seeds / methi – 2 tsp
Split Balck gram / Urad Dal - ½ cup
Bengal Gram / Chana dal – ¼ cup
Red Chilli - 2 cup
Curry leaves -a hand full
METHOD
In a pan ,add few drops of oil and roast each ingredients seperately till they become golden colour Allow to cool the roasted ingredients and ,in a mixer, grind everything to a powder Allow the ground sambar powder to cool off completely and then store it in an air-tight container.
Use as required to make sambar
Do not use wet spoon or wet hand to have a good shelf life.

To make sambar powder in large quantity , increase everything proportionately have taken
You can increase / decrease the quantity of red chilli accordingly.
You can even add few spoons of this powder making vegetable fries / curries .
