A very easy and eggless pomegranate cake recipe where the flavor
of pomegranates shine in this cake. This cake I have baked for my Sister in law's wedding anniversary, Try this and enjoy the pomegrantes in your cake.
INGREDIENTS
All purpose Flour -1 ½ cups
Butter -6 tbsp (softened)
Powdere Sugar - 1/2 cup
Pomegranate juice -3/4 cup
Baking soda -1/2 tsp
Baking Powder -1 tsp
Milk -1/2 cup
Salt -a pinch

FOR FROSTING
Whipping Cream -2cups
Icing sugar - 1 cup
mixed fruit flavoured essence - few drops
Green food colour - few drops
Icing sugar - 1 cup
mixed fruit flavoured essence - few drops

METHOD
Sieve maida, salt, baking soda and baking powder and mix all dry ingredients in a bowl
and keep aside.
Extract the pomegranate juice.
In a bowl, beat butter and sugar till it become creamy texture.
Now add Pomegranate juice, milk and mix well.
Add dry ingredients slowly into this mixture and fold well.
Grease the cake pan line it with butter paper and pour the batter and tap the pan on the kitchen counter to remove air bubbles in the batter.
Bake in 350 F or 180 degree c for 15 - 20 minutes.
After 20 minutes check the cake by inserting a tooh pick in the centre of the cake. If it comes out clean, the cake is done.
Once done remove it from the oven and cool down.
Remove the grease paper and cool the cake completely before frosting.
Mean while beat the whipping cream with icing sugar, essence and food colour.
Layer the cake into 2 and apply the frosting all over the cake and pipe the sides of the cake.
Your yummy pomegranate cake is ready to eat.
