We used to prepare different varieties
of thuvayal / chutneys.
But here I have prepared a nutrition packed mixed herbal chutney /
thuvayal with brhami leaves, tulsi leaves, betel leaf, karpooravalli / pani koorkai leaf,
coriander leaves, curry leaves, mint / pudina leaves. For those who don’t like the aroma of these
herbs, this garlic helps to reduce the aroma of herbs and increases the taste
of the thuvayal / chutney.
Serve this chutney as an accompaniment
for your breakfast, lunch and dinner..

INGREDIENTS
Brahmi leaves, tulsi, betel leaf. Karporavalli
/ kanikoorkai leaf,
Coriander leaves, curry leaves, mint/
pudina leaves -
all together 2 hands full.
Grated coconut -1 cup
Green chillies -
4 nos
Red chillies -
2 nos
Garlic -
4 nos
Chopped tomato -1
big
Oil -
2 tsps
Gram dhal / kadala paruppu - 1 tbsp
Salt -
to taste
METHOD
Clean Wash all the leaves well and
drain the excess water and keep aside.
Heat oil in a pan, add gram dal and red chillies and fry till gram
dhal turns golden colour.
Add garlic, green chillies and fry till
the garlic turns golden colour.
Add grated coconut fry for few seconds
in medium flame.
Finally add all our herbal beauties and
mix well with the coconut and fry for 2 minutes.
Remove from flame and add needed salt.
Allow it to cool and grind in a mixer
to a smooth paste.
Add very little amount of water while
grinding, that too if needed.
Healthy yummy, nutrition packed green
herbal beauty chutney / thuvayal is ready to serve with dosas, idlis, rotis rice etc.
