Another unique
sweet from sachu’s kitchen, It is bittergourd halwa yeah
sounding weird no!!!!!!!! . I thought why we are making our bitter experiences to sweet
only in life, why don”t we make bitter vegetables to a sweeter dessert. Yeah the
outcome is this, bittergourd/ karela/paavakkai halwa. You love this dessert,
no one knows this is prepared from bittergourd unless you say it.

INGREDIENTS
Bitter
gourd(grated) - 1 cup.

Ghee – 4 tbsps.
|
Sugar – 1 ¼ cups
|
Cardamom powder - 1 tea spoon.
Coconut milk
powder - 1/4 cup.
Cashew nut – 7 nos.
|
METHOD
|
Scrape the skin of the bittergourd /
paavakkai slightly.
Remove seeds from bitter gourd and grate it
coarsely.
Squeeze out the juice well from the
bittergourd and wash again.
And squeeze again and keep aside.
Heat 3 tbsps of ghee, add bitter gourd and
saute it in a low flame .
Add sugar, cardamom powder and mix well .
Cook for 3 to 5 minutes in a medium flame.
Add coconut milkpowder and mix well.
Cook until the bittergourd halwa thickens.
Fry the cashews in remaining ghee and
garnish the bittergourd/ paavakkai / karela halwa
Yummy
Bitter gourd halwa is ready to serve.
NOTES
If you want
put the grated bittergourd in boiling water for few seconds and drain well
before frying it in ghee.
