VATRAL  KUZHAMBU

For this recipe seasoning is done in the begining

FOR SEASONING :


·     Til oil – 2 tbsp
·    Mustard seeds – 1 tsp
·    Urad dal – 1 tsp
·    Channa dal  - 1 tbsp
·    Chundakkai or manattakkali  - 2 tbsp
·    Curry leaves – 2 sprigs
·    Asafetida ( hing ) – ¼ tsp

OTHER INGREDIENTS :

·         Tamarind - orange size(extract the pulp )
·         Turmeric powder – ¼ tsp
·         Asafetida ( hing) – ½ tsp
·         Jaggery – 2tbsp
·         Sambar powder – 3 tsp
·         Pepper powder – ½ tsp
·         Chilli powder – 1 tsp
·         Coriander powder – 1tsp
·         Rice powder – 2 tbsp ( mixed in ¼ cup of water )

METHOD :
·         Heat oil in a pan ,  & add the seasoning ingredients one by one  given in order .
·         Add the tamarind pulp , turmeric powder , chilli powder , coriander powder , pepper        powder, sambar powder hing , jiggery ,salt & boil well adding curry leaves ,till it is reduced  to ¼ of the quantity .
·         Now add enough water , the rice powder mixed in water and boil well .
·         When the required thickness is achieved , remove from the heat  7 serve hot with hot rice      appalams , & paruppu tuvayal .
