MUSTARD RICE


Hot mustard rice goes for easy preparation, you can make up this hot rice anytime if you have cooked rice in.  But I have prepared this with basmathi rice. This rice is prefect for lunch box  and serve it with papads,raitas . Easy to prepare and tastes simply marvellous with a fantastic flavour of mustard seeds and garlic.

INGREDIENTS

Basmathi rice          - 1 cup
Water                          - 2 cups


FOR SEASONING

Ghee                         - 1 tbsp
Mustard seeds     - ½ tsp
Urad dal                  -1 tsp
Channa dal            -1 tsp
Red chillies           - 2 nos
Curry leaves          - 1 sprig








INGREDIENTS FOR GRINDING

Freshly grated coconut    - ¼ cup
Red chillies                             - 7 nos
Garlic pods                             - 7 cloves
Jiggery                                      - 1 tbsp
Tamarind                                -gooseberry size
Mustard seeds                      - ¼ tsp
Asafetida powder               - a pinch
Grinnd the above ingredients to a smooth paste and keep aside.


INGREDIENTS FOR GARNISHING

Cashews                                 - 10 nos
Ghee                                       - 1 tbsp






METHOD

Soak basmathi rice for 15 minutes and cook it adding needed salt for rice, and one tbsp of ghee.
And spread the cooked rice in a plate and allow it to cool.
Heat oil in a pan add mustard seeds,when it splutters add urad dal, channa dal redchillies, curry leaves,fry it till golden colour.
Add the ground paste and required salt to the seasonings and fry it till the moisture absorbs.
Mix the above masala to the cooled rice
Garnish it with fried cahews.
Mustard rice is ready to serve.
