A
sweet cutlet to enjoy your evening tea, a crispy cutlet loaded with nuts,
coconut gratings and ripe nendram pazham. Try out this nendram
pazham /sweet banana cutlet.
INGREDIENTS
Ripe banana / Nendran pazhamcooked and mashed - 2 nos large sized
Rice flour - 1tbsp
Maida - 4 tbsps
Maida - 4 tbsps
Ghee -
3 tbsps
Cashew nuts - 20 nos
Raisins -
20 nos
Grated Coconut -
1 cup
Sugar -1/4Cup
Honey -
¼ cup
Cardamom powder -1
tsp
Bread Crumbs -
1 cup
Milk
mixed with 2 tbsps of maida and
a pinch of cardamom powder - ½ cup
a pinch of cardamom powder - ½ cup
Oil -
for deep frying
METHOD
Steam cook the ripe banana along with
the skin.
Peel off the skin,and mash them
well.
Add rice flour, maida and mix well and keep
aside
Heat ghee in a pan and fry cashew nuts
and raisins.
Add coconut, sugar, honey and cardamom
powder and sauté for few minutes.
Add banana-rice dough and mix well and
remove from flame.
Allow it to cool and take medium sized
balls from banana mixture, and flatten like cutlets.
Dip in milk maida batter and roll in
bread crumbs.
Heat oil in a pan. Drop gently the
cutlets till they become golden brown on both sides.
Delicious Nenthra pazham cutlets are
ready to serve.
Serve hot.
