POTATO CORIANDER STEW



We prepare lot of dishes with our all time favourite potatoes and almost everyone’s favourite too. But this  potato dish is quite unique one with coriander gravy. Try this Potato coriander stew.









INGREDIENTS

Potatoes                      - 5 nos(medium sized chopped itno cubes)
Salt                              - to taste


INGREDIENTS FOR WET GRINDING

Fresh Coriander leaves    - 1 small bunch
Freshly grated coconut    - 3/4 cup
Green chiillies                     - 9 nos(add more if you want more spicy)
Ginger                                     - 1 inch piece
Garlic                                       - 4 cloves
Small onions                        - 1 cup
Coconut gratings               - ½ cup

Grind the above ingredients to a smooth paste and keep aside.

INGREDIENTS FOR SEASONING

Fennel seeds                     - 1 tsp
Red chillies                         - 2 nos broken
oil or ghee                            - 1 tbsp








METHOD

Steam cook the potato cubes
Add the ground coriander coconut paste to the boiled potatoes and mix well.
Add the required salt and required water to get the desired consistency and boil it in a medium flame till the raw smell goes.
Season the stew with fennel seeds and red chillies.
Potato coriander stew is ready to serve.
Serve hot with steaming white rice, rotis, dosas etc.
