Potato lovers and weight watchers will enjoy this curry.. You can have it with roti, rice or naan. This is
a very easy recipe prepared without oil, without onion and garlic. Adding kholapuri masala powder to the curry enhances the taste . I have added home made kolhapuri masala powder. For recipe of kolhapuri masala powder check this link.
INGREDIENTS
Baby potatoes -1/2
Kilogram
Tomato puree -2 Cup
Turmeric powder -1/2
Teaspoon
Kolhapuri masala
powder - 2 tbsps
Ginger paste -1 tbsp
Water -as
required for ypur consistency
Cashews -
100 grams
Khus khus -
100grams
Kasoori methi - 2 tbsps
Salt - to taste
(dry roast the kasoori methi in low flame for few seconds and crush it between the palm of your hands and keep aside.)
FOR THE GARNISHING
Cardamom powder -1 Pinch,
freshly ground
Fresh cilantro -1 tbsp chopped finely
Fresh cream - 1 tbsp (optional)
METHOD
Take the baby
potatoes, and using a knife scrape off the surface of the skin. (Do not peel
the skin).
Once done for
each of them, put them in a bowl of water, to clean the skin completely.
To prepare the
tomato puree, tomatoes may be boiled, cooled and then pureed.
Boil the potatoes in the tomato puree, adding
ginger paste, turmeric powder in the pressure cooker for 6 whistles.
Meanwhile dry
roast cashews and khus khus separately and grind to a smooth paste adding milk
and keep aside.
Add the cashew
khus khus paste to the cooked potatoes
and boil it for few minutes in medium flame.
Add kolhapuri
powder, salt and cook for some time.
Finally add
kasoori methi, cardamom powder , mix well and remove from flame.
Oil free, onion free, garlic free potato kolhapuri masala is ready to serve.
Serve with hot
rice, roti, naan, paratha or with puff
puris.
